Lion's Mane Mushroom and Wild Rice Pilaf

Ingredients:

  • 1 cup wild rice

  • 2 cups vegetable broth

Instructions:

  1. In a fine-mesh strainer, rinse the wild rice thoroughly under cold water. Drain and set aside.

  2. In a medium-sized saucepan, bring the vegetable broth to a boil over medium heat. Add the rinsed wild rice, reduce the heat to low, cover, and simmer for approximately 45 minutes, or until the rice is tender and the majority of the liquid is absorbed. Once cooked, remove from heat and let it rest, covered, for an additional 10 minutes to steam.

  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent and fragrant.

  4. Stir in the minced garlic and cook for another 1 minute.

  5. Add the Lion's Mane mushrooms to the skillet and sauté for 5-7 minutes until they release their moisture and turn golden brown.
